SolToro Tequila Grill is a contemporary Mexican dining experience showcasing a fun, modern interpretation of classic Mexican cuisine. The lively, upscale cantina-like restaurant is located on the casino floor of Mohegan Sun’s Casino of the Sky (adjacent to the convention center entrance).


SolToro Tequila Grill’s open and welcoming atmosphere radiates energy and fun. Deep shades of red and yellow spark energy and emotion, amidst unexpected mixes of rustic wood and sleek resin. The 206-seat lounge and dining room includes unique hand-carved wooden chairs and bar stools, rough hewn white oak columns and beams defining the raised dining room. Punched bronze panels are back-lit for juxtaposition of traditional Mexican craftsmanship with modern accents.

The flavors of SolToro blend Mexican tradition, authenticity and an appreciation of modern dining. Executive Chef Edwin Mateo delivers a menu rich with regional Mexican flavors using fresh premium ingredients – from traditional Mexican street food to homestyle specialties. Tableside guacamole cards is served by guacamole girls and customized to guests’ specific preferences.


A winding 30-seat bar surrounds illuminated resin bar fixtures, in the shape of an oversized Mexican colonial emblem. SolToro Tequila Grill’s impressive tequila list features 100+ varieties, offering customized tastings and flights of blanco, reposado and anejo selections. Fresh margaritas and signature sangrias top the beverage list, which also includes an impressive selection of Spanish and Latin American wines.

Executive Chef Edwin Mateo traces his formative culinary training back over 18 years, to early industry experiences in Latin America. After coming stateside, he spent 12 years with Boston-based Back Bay Restaurant Group, Inc. before joining Michael Jordan’s Steak House and honing his skills under Executive Chef Eric Baldridge. Chef Mateo blends a deep understanding of Mexican cuisine with a deft hand for modern interpretation.
